No, we cook some, but, we eat out a lot. Usually, several times a week. We forget to thaw something out and all of a sudden, it is 5 pm. Or, we forget to eat lunch and go early to dinner....not good, I know, but, sometimes, it is just an outing to go out to eat.

Expensive to eat out every day also or several times a week.
I'm glad you cook, ukmatt. Men who like to cook are almost always more creative and better cooks than women like me who cook almost every day and have for 48 years.
Hmmm... I might be tempted to marinade them in some pesto and then quickly sear them off in a pan and (if not quite done) finish in a warm oven.
You could serve with some orzo pasta tossed in more pesto with some pinenuts and chopped sun dried tomatoes and some blanched asparagus pieces.
Or... you could put some bbq style dry rub on them, sear them and serve with bacon/onion/chipotle mashed potatoes (crisp bacon in a pan, remove and finely chop, fry sliced onions in the bacon fat, add the chopped bacon and a finely chopped chipotle chile - mash the potatoes and stir in the bacon mixture and some milk).

I cook to relax - I have a stressful job and coming home and cooking from scratch helps put an end to the work day.

Given they're loin chops and prone to drying out I think I'd brine the chops (with some of the rub in the brine) and then rinse and dry them before rubbing with more of the same rub.
center cut loin pork chops.....I have never had them turn out dry.
I'm going to go check my pantry and see what I can put together. No way I am going to the store if I don't have an ingredient. This is definitely stay at home weather for me, but great weather to cook a good meal.
